10 spots left Updated March 11thChef Paul Malcolm will lead this class and cover techniques for Frenching, chopping and racking of pork, lamb and venison.We will cover cooking procedures that will enhance each type of meat along with simple preparations for cooking them during class.We ask that you are comfortable with a boning knife and you are an experienced cook. While you will be learning recipes, the flow will be faster than other classes.
